Slow Cooker Beef & Broccoli


Ingredients

  • 1 1/2 lbs Sirloin Steak, Thinly Sliced

  • 1 cup low-sodium beef broth

  • 1/2 cup low-sodium soy sauce

  • 1/2 cup brown sugar

  • 3 Tbsps sesame oil

  • 1 Tbsp Sriracha

  • 1 Tbsp minced Ginger

  • 3 Cloves garlic, minced

  • 3 green onions, thinly sliced, plus more for garnish

  • 2 Tbsps cornstarch

  • 2 cups broccoli florets

  • Sesame seeds, for garnish

  • 3 Cups cooked brown rice, for serving


Directions

  1. In a mixing bowl, combine beef broth, soy sauce, brown sugar, sesame oil, sriracha, ginger, garlic, and green onions.

  2. Add Steak to the bottom of a large slow cooker. Pour the broth mixture over the steak and stir well.

  3. Cover and cook on low for 4 hours.

  4. When the steak is tender, spoon a few tablespoons of broth from the slow cooker into a small bowl; whisk in cornstarch to make a slurry. Pour into the slow cooker and toss with beef until combined.

  5. Stir in Broccoli, Cover and cook an additional 15-20 minutes.

  6. Serve over rice and garnish with sesame seeds and green onions, if desired.
