Recipe: Carnitas

Items Needed:

Chuck Roast

1 Bell Pepper

1 Jalapeno

1 Onion

Rub:

Chili powder, Cumin, Garlic powder, Onion powder, Cayenne pepper, Salt, Pepper, Tiny pinch of cinnamon

Instructions:

Mix dry ingredients for the rub and then rub all over the chuck roast. Chop jalapeno, bell pepper, and onion. At this point you can place everything in a ziplock bag and place in the fridge overnight or you can place everything in the crock pot. Cook on low for 8 hours. Once it’s done take out and shred and then serve with corn tortillas and your favorite toppings. You can use left overs in enchiladas, with eggs for breakfast (like migas), burritos, taquitos, nachos…..leftover possibilities are endless!

Recipe Title: Mississippi Crock Pot Roast

Recipe: For approx. 2.5lb chuck roast: Generously salt and pepper both sides of a chuck roast and sear off in a pan with olive oil or butter. Remove from pan and place in a crock pot. Season both sides with paprika, garlic powder, and onion powder. Place several tablespoons of butter on top of the roast, and about 1/4c of sliced pepperonccinis. Cook on low for 8-10 hours.

Recipe Title: Hot curry roast (6–8 servings)

Ingredients:

1- 4–5 lbs beef chuck roast (or lamb shoulder, or whole chicken)

3 Tbsp hot curry powder (Madras or homemade hot blend)

2 Scotch bonnet or habanero peppers minced (adjust to heat preference)

6 cloves garlic minced

2 Tbsp fresh ginger, grated

1 large onion, chopped

2 sprigs thyme (or 1 tsp dried)

2 tsp all-purpose seasoning (or salt + black pepper to taste)

2 Tbsp soy sauce

3 Tbsp vegetable oil

1 cup beef or chicken stock

2 carrots, cut into chunks

2 potatoes, cubed (optional)

1 can (14 oz) coconut milk (optional for creaminess)


Marinade:

Combine curry powder, soy sauce, garlic, ginger, peppers, thyme, salt, and black pepper into a paste. Rub the paste all over the roast, cover, and marinate for at least 4 hours (overnight is best).


Instructions:

After searing roast, place in slow cooker with vegetables, stock, and coconut milk. Cook on Low 7–8 hours or High 4–5 hours, until fork-tender.


Serving Suggestions 1 Slice roast and serve with rice and peas, mashed potatoes, or roti. Spoon curry gravy over meat and sides. Garnish with fresh cilantro or scallion


Recipe: Spicy Roast Sliders

Ingredients:

Chuck or other roast

1 jar sliced pepperoncinis

1 package of zesty Italian dressing


Instructions:

Put all ingredients in crock pot for 5-6 hours on high


Serve on Hawaiian rolls for sliders
