Bourbon Fresh Peach Bavettes

Steak Seasoning
Bavette (~2 pounds)
Season Bavette with any steak seasoning you like.
Sear in cast iron skillet using neutral oil.
Slice apart (I know but you don't want to have to cut with the peaches) and put back in the cast iron so its steak bites - I have kids... it's easier. Serving as a regular steak is a-ok, too!
Peach sauce
1/2 C thinly sliced onions
2 T Butter
Saute in pan until translucent on medium
Add all of the following and let simmer for 20 mins while letting steaks rest
2 C Peaches - Ripe! (Mine were about to go bad so I needed an idea.)
1 T Country or Dijon Mustard
2 T Apple Cider Vinegar or White Wine Vinegar
Salt
Pepper
1 T Thyme
1 T Worcestershire
Cook on medium for about 5 minutes while you sear off steaks.
Add 1 T Harissa and 4 cloves of garlic. Sauté until fragrant.
Add 2 T Bourbon and light on fire!!
