Heading into New Years, the superstitions abound. We eat Black Eyed Peas regularly but many friends find them disgusting so I thought I would share a recipe my kids love. Quick and easy and NO-LEFTOVER tasty!
1 Medium Sweet Onion (diced)
2 Green Peppers (diced)
2 TBS Olive Oil or Bacon Grease or Butter
2 Pkg of Frozen or Fresh Black Eyed Peas (12 oz each)
12 oz of Broth (Beef or Chicken)
2 Pkg of Barnard Beef Sausage (Garlic -12 oz each)
Spices to Taste
Garlic Powder (approx 2 TBS)
Onion Powder (approx 2 TBS)
Paprika (approx 1 TBS)
Basil (approx 1 TBS)
Parsley (approx 1 TBS)
Process: (Air Fryer)
Saute onions and peppers in oil/fat until soft and turning brown. Remove into bowl.
Saute sliced sausage in remaining oil/fat until browned.
Dump everything into Air Fryer and put on pressure cook for 45 minutes.
We served with sourdough bread or cornbread and spicy Cowboy Candy Jalapeños.
